Breakfast in the Crock Pot




Breakfast casserole in the crock pot! Cooks while you sleep!


Ingredients:
1 bag 26 oz. frozen hash browns
12 eggs
1 cup milk
1 tablespoon ground mustard
1 16 oz. roll sausage
maple, sage or regular sausage.
Salt and pepper
16 oz. bag shredded cheddar cheese
Directions:
1. Spray crock pot and evenly spread hash browns at the bottom.
2. Crack 12 eggs in a large bowl.
3. Mix well (and slowly) using a whisk.
4. Add the milk.
5. Go ahead and sprinkle in the ground mustard. This might sound like a weird ingredient, but I've come to love (and use) this in most of my recipes.
6. Add plenty of salt....
...and lots of fresh pepper. Mix well and set aside.
7. Cook the sausage on high heat, drain and set aside.
8. Add sausage on top of hash browns.
9. Is this enough cheese? Maybe? Probably. Throw the whole big bag in there.
10. Mix it up well. Or good, depending on where you're from.
11. Pour the egg mixture over everything in the crock pot. Using a wood spoon, even everything out so it's spread evenly.
12. Turn the crock pot on low for 6-8 hours.
Some fun variations of this recipe. Before cooking (during prep) you can add:
chunks of sourdough bread
diced chiles
salsa
diced green onions

Italian Dough Recipies






 

Spicy Italian Crescent Ring

Ingredients

2 cans (8 oz) Pillsbury™ refrigerated crescent dinner rolls
1/2 cup well drained roasted red bell peppers (from a jar)
8 slices provolone cheese, halved
1/3 lb deli sliced hot salami
1/4 lb deli sliced ham
1/4 lb deli sliced capocollo
1/2 cup well drained hot pepper rings (from a jar)

Steps
1 Heat oven to 375°F.
2 Unroll both cans of dough; separate into 8 rectangles. On ungreased 12-inch pizza pan, arrange rectangles in ring so short sides of rectangles form a circle in center. (Dough will overlap; half of each rectangle will hang over edge of pan. Dough ring should resemble a sun.)
3 Spread roasted red bell peppers towards center of ring on bottom halves of rectangles. Top with half of the cheese. Layer salami, ham and capocollo slices over cheese. Arrange pepper rings over top. Cover with remaining half of cheese.
4 Bring each dough rectangle hanging over side of pan up over stacked filling, tucking dough under bottom layer of dough to secure it. Repeat around sandwich until entire filling is enclosed (some filling might show a little but that is okay.) Sprinkle with black pepper.
5 Bake 18 to 22 minutes or until dough is golden brown and thoroughly baked. Remove from oven; cool 5 to 10 minutes before cutting into serving slices.
To drain the roasted red bell peppers thoroughly, use a fine mesh strainer, then set on a few paper towels to absorb any extra moisture.

*If you don’t like it spicy, switch out the deli meats for a milder flavor, and swap in some ripe olives instead of the hot pepper rings.

Crock Pot Mac and Cheese

Slow Cooker Macaroni and Cheese
Ingredients
  • 4 1/2 c. elbow macaroni, uncooked
  • 2 c. cheddar cheese, grated
  • (1) 8oz pkg cream cheese, cut into cubes
  • 4 cups milk
  • salt and pepper to taste
Instructions
  • Combine all the ingredients in the bowl of a slow cooker; cover and cook on low for 3-4 hours.
  • Stir throughout cooking time to combine ingredients.
Notes
You can add more grated cheese for a cheesier version. Up to 4 cup

Baked Pumpkin Pie Oatmeal

Oatmeal is a meal that I have never been a huge fan of, at least in the traditional sense. I have always loved a good oatmeal cookie however! My view of oatmeal started to change though when a reader sent me this recipe for Baked Oatmeal – I liked it so much I have made it multiple times now, often using fresh apples in place of the dried fruit. So when I saw this recipe for Baked Pumpkin Pie Oatmeal on Pinterest I had to give it a shot. Pumpkin Pie is one of my favorite desserts so the idea of getting to have it in a healthier way throughout the year just made my day. What I love about these baked oatmeal recipes is I put in a little bit of work on a Sunday afternoon and I can have breakfast already made all week long.
Baked Pumpkin Pie Oatmeal: Serves 12-18
29oz Pumpkin Puree (Large can)
1/2C Brown Sugar
4 Eggs
2tsp Pumpkin Pie Spice
1tsp Salt
1-1/2tsp Baking Powder
1tsp Vanilla
3C Milk – I use FF or 1%
6C Oats (Old Fashioned)
In a large mixing bowl whisk together all of the ingredients except for the oats. Once these ingredients are thoroughly mixed together fold in the oats and pour into a greased 13×9 pan. Cover the pan with aluminum foil and bake in a 350° oven for 30 minutes, then remove the foil and continue to cook for another 30 minutes. Remove from the oven and either serve immediately (on its own, or with milk & maple syrup!) or refrigerate and have later.

Melting Pot Cheddar Cheese Fondue

Melting Pot Cheddar Cheese Fondue You can make this famous Cheddar Cheese Fondue at home with this copycat recipe for the Melting Pot Cheddar Cheese Fondue.

Ingredients

  • 1/2 cup Coors Light beer
  • 2 teaspoons chopped garlic
  • 2 teaspoons dry mustard powder
  • 2 teaspoons Worcestershire sauce
  • 6 ounces medium-sharp cheddar cheese
  • 2 ounces Emmentaler Swiss cheese
  • 2 tablespoons all-purpose flour

Instructions

If you are using an electric fondue pot, turn it on to medium; otherwise use a double boiler to heat up this mixture. Place beer, garlic, dry mustard, and Worcestershire in the pot and combine well. Shred or cube the cheeses and toss with flour, coating the cheese well. (The flour will help thicken the sauce.) When the beer mixture is warm, add one-third of the cheese and whisk very well. Once the cheese has been incorporated well, add half of the remaining cheese and whisk in very well. Add the remaining cheese and whisk until nice and smooth.
