Oven Shrimp Scampi


I made this tonight and it was awesome!  I doubled the recipe and made 2lbs of shrimp, I recommend NOT doubling the Italian dressing mix. I also served this over veggie pasta for a healthy alternative to regular pasta. Tastes the same to me

Succulent shrimp roasted in fresh slices of lemon drizzled with butter and delectably seasoned with garlic and herbs, makes an amazing appetizer, or serve it over a bed of piping hot fresh angel hair pasta for a quick scampi!

You'll Need:
1 lb Raw Shrimp
1 Lemon
1 pkg Italian Dressing Mix (like Good Seasons)
1 stick butter
1 heaping tsp minced garlic

Preheat the oven to 375F

Melt the butter, mix in garlic and pour it into a 9x13 baking dish. Slice the lemon thinly and arrange in a single layer in the butter. Spread the fresh raw shrimp over the lemon slices in a single layer. 
Sprinkle the packet of italian seasoning over the shrimp. Bake for 8-12 minutes or until shrimp are cooked throughout. Shrimp are translucent when raw and turn a bright pink/white when cooked through.

Crock-Pot Cherry Pie Moonshine
Ingredients
  • 30 ounces canned cherries in heavy syrup 
  • 1/2 cup granulated sugar
  • 32 ounces bottled cherry juice
  • 2 cups grain alcohol or vodka

Instructions
  1. Add the sugar, cherry juice and both cans of cherries to the crock-pot.
  2. Cook on low for 1 hour to 2 hours or until the sugar has dissolved and the mixture is heated.
  3. Allow the mixture to cool.
  4. Once the liquid has cooled , add in the grain alcohol or vodka.
  5. Pour mixture into jars with lids.
  6. Makes about 3 Quart Jars

Crock-Pot Apple Pie Moonshine
Ingredients
  • 1 gallon apple cider
  • 1 liter everclear alcohol
  • 3 whole cinnamon sticks

Instructions
  1. Add Apple Cider and Cinnamon Sticks to crock-pot.
  2. Cook on low for 8 hours.
  3. Turn off crock-pot and allow the cider to cool to room temp.
  4. In a large pan (large enough for a 5 quarts), mix cider and the Everclear Alcohol. If your crock-pot is large enough for this, you can do it there once the cider is cooled.
  5. Pour into 5 Quart Canning Jars (or bottles of your choice) and put lids and rings on.
  6. Let the jars sit in a cool dark place for 30 days to allow the alcohol to take the flavor of the cider.
  7. This is shelf stable and can be kept on the counter, or if you prefer it chilled, in the refrigerator.
  8. NOTE: this is a strong adult beverage. Serving size is one shot glass.
