Egg Roll in a Bowl
we tried this tonight and it was sooooooo good! made a large quantity and was very inexpensive too. I added some teryiaki dipping sauce and it was better then the pot stickers at Fridays! yummm

SAUSAGE EGG ROLL IN A BOWL
YIELD: SERVES 4
PREP TIME: 2 MINUTES
COOK TIME: 15 MINUTES
TOTAL TIME: 17 MINUTES
INGREDIENTS:
- 1 pound ground pork sausage
- 6 cups coleslaw mix or shredded cabbage
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 tablespoon soy sauce
- 1/4 cup chopped green onions
- 1 tablespoon sesame oil
DIRECTIONS:
- Heat a large skillet over medium heat. Add the sausage and cook, stirring often to crumble, until cooked through. Do not drain.
- Add the coleslaw mix, garlic, ginger, and soy sauce to the skillet with the sausage. Cook for 3-4 minutes or until cabbage has softened a bit.
- Remove from the heat and top with the green onions and drizzle with sesame oil.
- Serve immediately.

Pasta Fagioli in the crock pot
Pasta Fagioli in the Crockpot~ just like Olive Garden
2 lbs ground beef
1 onion, chopped
3 carrots, chopped
4 stalks celery, chopped
2 (28 ounce) cans diced tomatoes, undrained
1 (16 ounce) can red kidney beans, drained
1 (16 ounce) can white kidney beans, drained
3 (10 ounce) cans beef stock
3 teaspoons oregano
2 teaspoons pepper
5 teaspoons parsley
1 teaspoon Tabasco sauce (optional)
1 (20 ounce) jar spaghetti sauce
8 ounces pasta
Directions:
Brown beef in a skillet.
Drain fat from beef and add to crock pot with everything except pasta.
Cook on low 7-8 hours or high 4-5 hours. Add pasta the last 30 minutes.

Oven Shrimp Scampi
I made this tonight and it was awesome! I doubled the recipe and made 2lbs of shrimp, I recommend NOT doubling the Italian dressing mix. I also served this over veggie pasta for a healthy alternative to regular pasta. Tastes the same to me
Succulent shrimp roasted in fresh slices of lemon drizzled with butter and delectably seasoned with garlic and herbs, makes an amazing appetizer, or serve it over a bed of piping hot fresh angel hair pasta for a quick scampi!
You'll Need:
1 lb Raw Shrimp
1 Lemon
1 pkg Italian Dressing Mix (like Good Seasons)
1 stick butter
1 heaping tsp minced garlic
Preheat the oven to 375F
Melt the butter, mix in garlic and pour it into a 9x13 baking dish. Slice the lemon thinly and arrange in a single layer in the butter. Spread the fresh raw shrimp over the lemon slices in a single layer.
Sprinkle the packet of italian seasoning over the shrimp. Bake for 8-12 minutes or until shrimp are cooked throughout. Shrimp are translucent when raw and turn a bright pink/white when cooked through.

Instructions
- Add the sugar, cherry juice and both cans of cherries to the crock-pot.
- Cook on low for 1 hour to 2 hours or until the sugar has dissolved and the mixture is heated.
- Allow the mixture to cool.
- Once the liquid has cooled , add in the grain alcohol or vodka.
- Pour mixture into jars with lids.
- Makes about 3 Quart Jars

- Add Apple Cider and Cinnamon Sticks to crock-pot.
- Cook on low for 8 hours.
- Turn off crock-pot and allow the cider to cool to room temp.
- In a large pan (large enough for a 5 quarts), mix cider and the Everclear Alcohol. If your crock-pot is large enough for this, you can do it there once the cider is cooled.
- Pour into 5 Quart Canning Jars (or bottles of your choice) and put lids and rings on.
- Let the jars sit in a cool dark place for 30 days to allow the alcohol to take the flavor of the cider.
- This is shelf stable and can be kept on the counter, or if you prefer it chilled, in the refrigerator.
- NOTE: this is a strong adult beverage. Serving size is one shot glass.

One Pan Meals
Oven Baked Fajitas
Ingredients:
1 pound boneless, skinless chicken breasts, cut into strips
2 Tbsp vegetable oil
2 tsp chili powder
1 1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp dried oregano
1/4 tsp seasoned salt
1 (15 oz) can diced tomatoes with green chilies (Rotel)
1 medium onion, sliced
1/2 red bell pepper, cut into strips
1/2 green bell pepper, cut into strips
Directions:
Preheat the oven to 400 degrees. Place chicken strips in a greased 13×9 baking dish.
In a small bowl combine the oil, chili powder, cumin, garlic powder, dried oregano, and salt.
Drizzle the spice mixture over the chicken and stir to coat.
Next add the tomatoes, peppers, and onions to the dish and stir to combine.
Bake uncovered for 20-25 minutes or until chicken is cooked through and the vegetables are tender
One Pan Spicy Lemon Chicken Pasta with Tomatoes
Ingredients
- 1 pound chicken breasts
- 2 Tbsp olive oil
- 1/2 cup diced yellow onion
- 1 Tbsp minced garlic
- 8 oz (about 2 1/2 cups) small, dry pasta
- 1 cup grape tomatoes, halved
- 2 cups chicken broth
- Juice from one large or two small lemons
- 1 cup water
- 1 tsp dried basil
- 1 tsp salt
- 1/4 tsp red pepper flakes (optional)
- 1/2 tsp pepper
- 1 cup shredded Mozzerella

Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add onion and stir, cooking until soft and nearly translucent.
- Stir in garlic and cook for 30 seconds.
- Add chicken and cook until just browned.
- Stir in the pasta, tomatoes, chicken broth, lemon juice, water, basil, red pepper flakes, salt and pepper.
- Bring to a boil and continue to stir often, uncovered, for about nine minutes, or until most of the liquid has evaporated.
- Remove from heat, sprinkle cheese on top, and cover for ten minutes or until cheese is melted and remaining liquid is absorbed.
